Coconut Lime Energy Bites

I am always looking for new snacks that are filling and nutritious when I am running out the door. These were a great new variation! I love the mixture of the tangy lime juice with the dates and coconut! Hope you like them too! 

Coconut Lime Energy Bites
1 cup pitted dates
1/3 cup raw cashew pieces (I get mine in the bulk bin)
1/3 c. almonds
1-2 limes, juice and zest (I LOVE lime so I used two--but it might be too tangy for your taste)
1/3 c. unsweetened coconut for rolling

Pulse dates in a food processor or high powered blender. Add nuts and juice/zest. Continue to pulse until mixture can be rolled into balls and hold its shape. Roll into balls, then roll in coconut. Store in the fridge until ready to eat!
