8 "Dump" Chicken Freezer Meals--You could make all of these in an hour!


I recently found the concept of "dump" dinners and I love it. The idea of pulling something from the freezer, dumping it in the crockpot, and coming home to a simple, clean dinner, sounded fantastic to me! The idea is that essentially you have a marinated chicken cooking in the crockpot, that you can serve with vegetables or rice, and BAM dinner is done. Clean eating is all about simplifying and exploring all the amazing food provided in the earth's bounty! And this makes it so easy.  This week I made a few "dump" dinner meals and put them in the freezer. Each one calls for 4-6 chicken breasts. You pull it out to thaw the day before and cook it in the crockpot for 6-8 hrs. 

Lemon garlic chicken

4-6 chicken breasts
2 Cloves Chopped Garlic (I used 1 tsp minced garlic)
 4 Tablespoons Olive Oil
2 Tablespoons Chopped Parsley
3 Tablespoons Lemon Juice
1/8 Teaspoons Pepper


 Sweet & Sour Chicken

1/4 cup + 2 Tablespoons Honey
1/4 cup + 2 Tablespoons Red Wine Vinegar
1/8 cup Liquid Aminos (or reduced sodium soy sauce)
2 Teaspoons Minced Ginger
4 Cloves Crushed Garlic

Salsa chicken

1/4 cup taco seasoning
1 cup salsa (or more depending on how much chicken you put in your bag)


Cilantro lime chicken

Juice of 2 limes
1 bunch of cilantro, chopped
1 tsp minced garlic (or about two cloves)
1/2 C. red onion, chopped (I just used about 1/4 cup dehydrated minced onion because I didn't have any on hand)
1 1/2-2 cups black beans, or 1 can (I love black beans I had just cooked some so I used about 2 cups)
1 tsp cumin
1 (16 oz) bag frozen corn, optional (I didn't have any on hand, but it would have been good!)

1 1/2 pounds of chicken breast
juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 minced garlic cloves
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin 
salt and pepper to taste

    Balsamic chicken
    From Sugar-Free Mom

    4-6 chicken breasts
     1 tablespoon extra virgin olive oil
    4 garlic cloves, minced
    2 teaspoons dried basil
    1 teaspoon salt
    1 teaspoon pepper
    3 teaspoons minced dried onion
    4 chicken breasts(12 ounces each), sliced in half lengthwise
    ¾ cup balsamic vinegar

    We ate the cilantro lime chicken tonight and it was fantastic! Mixed with a little cheese to make corn tortilla quesadillas that we dipped in plain greek yogurt and salsa! Yum!
